Abstract

The aim of this work was the analysis of the creative process in the design of plating in gastronomy. The methodology of this work had a qualitative approach. It was identified that most students manage to have a good idea about the creative process of chefs in the preparation of a new dish, their influences and inspirations, the importance of ingredients and the search for contrasts in texture, flavor, format and temperature, as well as understand the relevance of providing the customer with a gastronomic experience. As for the creative process in plated design from the perspective of the interviewed chefs, the applied research revealed that professionals believe that creative plating should be harmonious in terms of aesthetics, food composition, sensory stimuli and choice of tableware will be served.
